Here's a free list of publicly available channels from around the world: https://github.com/iptv-org/iptv Might be worth trying to make sure it works with your Roku. If not, could always invest in an Android TV box

What do you self-host that no one's heard of?
For route53 there is bshaw/route53-dyndns been using it for a while and works pretty well. With aws cli tools it is really easy to simply create a systemd service if you do not want to put it in a container.
