Immich doesn't have built in support for importing Takeout json at the moment. There's a bunch of scripts and guides out there for cleaning up the EXIF data though. I used https://github.com/m1rkwood/google-photos-takeout-scripts myself, but there's dozens more just a google away.

I've used this tool with good results https://github.com/m1rkwood/google-photos-takeout-scripts unfortunately it doesn't work for videos, and photos without a date are still messed up (would like a way to set the "date taken" as the "date uploaded to Google" but can't seem to be able to do it).

ExifTool is the gold standard for meta data editing, but has a steep learning curve, otherwise Google Photos Export Organizer looks like it should do the job (not tested).

I used this when transferring my photos over after google stopped the unlimited photos.
