Can I get Traffic Logs On Interconnects?
yes VPC flow logs are the way to go. just enable VPC flow logs on the subnets within your interconnect's VPC that you care about and use something like this fab little tool to make querying the logs easier https://github.com/obsrvbl/gcp-flowlogs-reader

Am I right to hate cloud functions?
