Personally I like Joplin (https://joplinapp.org/), because as much as Google Keep, etc are probably better or easier to sync, I like to keep my notes minimal and don't like giving all my data to every company.

You have to take good notes. I recommend Obsidian or Joplin. Then I recommend that you use Atlassian Jira for tracking your tasks and projects.

Not from me. I personally don't need Dropbox but I can see the utility if a company want to share a 1 TB storage area between employees. I'm guessing that's how it's used since I've never used it.
Edit: I took a look in my note taking bookmarks folder to see what I meant. I thought Obsidian was open source but it's not. I was thinking of Joplin, which I haven't tried yet, but will today

My go to is Standard Notes, I made the jump from Keep to that when de-Google-ing. Joplin and Turtl are also good options, from what I understand.
