Maybe you can take a look at my toy repo (https://github.com/fengwang/ceras) before getting started. This library heavily uses templated meta-programming techniques to build the computation graph at compile time, and is header only.

How to practice what I just learned in ML
I think I've went through the same courses as you. For me, it didn't mean much to just start finding datasets and creating neural network models with TensorFlow. Nearly everything taught in the courses are abstracted so all that's left to do is call a few functions and you're done. What I did was create my own neural network as I went through courses (https://github.com/rkuang9/FLARE/tree/dev). Please let me know if you're interested!

Seeking Career Advice to go from general CS background to a career in AI/Machine Learning
Work on projects. I have one here https://github.com/rkuang9/FLARE/tree/dev, it's a neural network library in C++ that has some functionality in computer vision (convolutions) and NLP (GRU). Haven't built anything cool from it aside from some example models. Currently am working on LSTM and eventually attention. I think this would be a cool project to show off on resumes.
