Maybe writing a simple(r) script like David-Else/fedora-ultimate-setup-script: The ultimate post-installation and setups script for Fedora 30/31/32/33 and Centos 8.x Workstation would be a solution as well.

CentOS Stream vs Feodra 33 for a Workstation
I have made an install script that tries to make the setup and software as similar as possible for both OS's: https://github.com/David-Else/fedora-ultimate-setup-script. If you look at the scripts you can see the various workarounds needs to get Centos the latest software, for example, the use of Flatpak.

Fedora 35 is a mess

What's new in Red Hat Enterprise Linux 9 Beta
I have been using it as a desktop with great success. The only issue is missing packages for more obscure apps. Luckily missing apps can be replaced by flatpacks or binaries.
