Check out Woof! to see a more conservative but still enhanced port of Doom, and imp it runs even smoother than GZDoom. The spirce port really can impact the feel of the game.

Is linux best OS for retro gaming?
For classic doom you can use gzdoom and get the WADs in Steam. If you want to stick more to the original, use Woof!, but you need to compile it yourself or use something like the AUR.

I just hit GitHub's repository size limit after committing for the first time since configuring Git-LFS. What should I use now?
Worst case scenario is using split(1) to restrict to 100MB chunks. I do something similar to upload the Half-Life game data in my repo here. But this is a fairly unique scenario and for standard projects, it should still be unnecessary.
