Are you / have you considered leveraging postgres' row level security for this (row filtering)? Feels like a natural fit for ensuring the right subset of data gets to the right users https://www.postgresql.org/docs/current/ddl-rowsecurity.html
E2E encryption would also be nice to have, it could be worth having a look at https://www.etesync.com/ for inspiration

Any alternative to Google contact?
A few days ago I saw some guys in this community saying that they uses https://www.etesync.com/ in order to sync contacts between Proton + Thunderbird (Desktop) + Mobile. I haven't used it yet, but I saved the link.

The programs will allow me to sync both my Google and my Etesyc Contacts and Calendars. Etesync also needs Etesync-Dav installed on the desktop but that is well explained on Github.

Not syncing on Android using Onedrive
I am now using SyncThing to sync between my phone and my PC. On Joplin, I have to install an older version of Joplin 2.5.5 from Joplin's Github. On Joplin, I choose "File System" and paste in the location where Joplin / SyncThing transfer the file in/out. It works great. Version 2.5.6 and later used a different Android SDK which needs to be revised in order to work with local files. Version 2.5.5 is the latest version that still works with local folder.

It's foolish to think open source isn't possible on Android.
Google Keep: This app is so basic that most open source note taking apps should suffice. As for the top editors, Joplin is good, can sync pretty well and even has error correction tools in case sync goes wrong, but you can't attach files bigger than 10 MB to notes. Neutrinote CE is almost just as good, it even has basic sketching feature but you can't attach anything other than images. Markor has terrible UX but it has good attachment support.
