Vertical Daisy chain 8x32 LED Matrix
It should be possible to modify the SP107E to run your own custom software and to connect to a different controller app according to this: https://github.com/xoseperez/espurna/issues/1437

Sonoff TH16 and AM2301(SI7021) invalid readings
The only think of is, that you may have version with the DS18B20 see (https://github.com/xoseperez/espurna/wiki/Hardware-Itead-Sonoff-TH ). In your situation, I would open the device, of course disconnected from power, and see what sensor is actually inside.

smart lights?
ESPhome and ESPurna are two alternative firmwares but I don't have any experience with them.
-
Thermostat with energy monitoring?
Code is open source, https://github.com/xoseperez/espurna and might be adjusted depending on you needs ?
- Custom project enclosure made in F360

Poster showing the smart bulbs brands, and the ecosystems they work with. A standardised protocol would be nice.
They exist for ages, like Noduino OpenLight / AI-Thinker AI Light. There is a plethora of opensource firmwares available for that.

Ender 3 S1 questions
I changed to a different firmware from someone named Mrsoc https://github.com/mriscoc/Ender3S1/wiki and it has action commands to support the filament runout on octoprint.
- How do you resume a printer after a power failure? Ender 3 S1.
- Can anyone share their Octoprint profile for the Ender 3 S1?
- Has the jyers firmware for Ender 3 s1 came out yet? Seeing the mesh on the screen is ALOT easier than paper method....

Auto home is not centered
Personally, I kinda found the v1.0.5 FW update from Creality to be trash. I would recommend going with mriscoc's custom 1.0.5 FW, which is what Im currently running/testing: https://github.com/mriscoc/Ender3S1
