The only way to ensure that your IoT devices don't communicate with random servers is to block them from doing so yourself. You create a separate network dedicated to IoT, either physically or using VLANs, that is completely cut off from the internet. This is where you connect your cameras, lights, door locks, thermostats, etc. To accomplish this you need some decently intelligent router/firewall like OPNSense and an access point that supports VLANS like this TP-Link (if connecting devices through wifi). You will also have to host your own NTP time server, which OPNSense does, so that your cameras and other devices know the correct time without pinging the web.
ESPhome and ESPurna are two alternative firmwares but I don't have any experience with them.
I reflash light bulbs and smart plugs with Tasmota. See https://templates.blakadder.com/ for device compatibility. Your devices will no longer "phone home". Then they can be controlled with home assistant or another integration. Finding devices that can still be flashed with Tuya convert can be a pita though, the alternative is disassembling and reflashing with a serial connection.
