I used vackup [1] that’s been obsoleted but still works for me. However, you still need to turn of the container temporarily.

NVMe for Docker?
Will look into that one as the recent docker volume backup extension seems to only be for docker desktop https://www.docker.com/blog/back-up-and-share-docker-volumes-with-this-extension/ unlike its origin https://github.com/BretFisher/docker-vackup.

Docker came up with https://hub.docker.com/extensions/docker/volumes-backup-extension, to be used in Docker Desktop 4m10 or up, which is the continuation of Vackup https://github.com/BretFisher/docker-vackup.

I have also have been using Vackup for a RPi4 running docker that doesn't have ZFS.

Accidentally "reset to factory defaults", now my databases are gone?
Look at using something like vackup occasionally to backup volumes. Or occasionally run application level backups (mysqldump, pg_dump) that get stored to some location outside docker.
- I Can't Back Up Docker Volumes... Instead I get a tar loop that continuously writes nonsense data
