I used vackup [1] that’s been obsoleted but still works for me. However, you still need to turn of the container temporarily.

NVMe for Docker?
Will look into that one as the recent docker volume backup extension seems to only be for docker desktop https://www.docker.com/blog/back-up-and-share-docker-volumes-with-this-extension/ unlike its origin https://github.com/BretFisher/docker-vackup.
- Tool or workflow to migrate a docker-compose stack to another host, including volumes?

Backup/Crash Server advice
Docker came up with https://hub.docker.com/extensions/docker/volumes-backup-extension, to be used in Docker Desktop 4m10 or up, which is the continuation of Vackup https://github.com/BretFisher/docker-vackup.

Docker Volumes backup
I have also have been using Vackup for a RPi4 running docker that doesn't have ZFS.

Accidentally "reset to factory defaults", now my databases are gone?
Look at using something like vackup occasionally to backup volumes. Or occasionally run application level backups (mysqldump, pg_dump) that get stored to some location outside docker.
- I Can't Back Up Docker Volumes... Instead I get a tar loop that continuously writes nonsense data

Which features of Portainer do you use the most? What is it missing for you?
I would also like to have that. In the meantime I am going to use this few click solution: https://github.com/alaub81/backup_docker_scripts

How do you backup your docker volumes?
Take a look https://github.com/alaub81/backup_docker_scripts
What are some alternatives?
bitwarden-backup-docker - Backup job for bitwarden-rs as docker container
alpine-mariadb - MariaDB running on Alpine Linux [Docker]
znapzend - zfs backup with remote capabilities and mbuffer integration.
AndroTainer - Android app for portainer
sanoid - These are policy-driven snapshot management and replication tools which use OpenZFS for underlying next-gen storage. (Btrfs support plans are shelved unless and until btrfs becomes reliable.)
postgres-gcs-backup - Simple Docker image to backup a Postgres db, to a GCS bucket
ppngx - Podman + Paperless NGX
volumes-backup - Migrate/Backup Docker-Volumes or Folders locally or to other Hosts (easy but safe)! This universal container will encrypt the backup-file and upload it to transfer.sh (see Environment- customize). Enables Migration to another platform (eg. from Docker to Kubernetes).
docker-postgres-backup-local - Backup PostgresSQL to local filesystem with periodic backups and rotate backups.
bacula-utils - A collect of tools to use with bacula
synOCR - synOCR turns your Synology DiskStation into a paperless office
dumputils-container - Container image which provides easy access to most backup/restore utils used for managing database backups.
