Right now I have a cronjob running a simple cp command. In the next few days I will look into https://github.com/offen/docker-volume-backup to see if it will back up bind mounted volumes (like I use) in addition to docker data volumes: https://docs.docker.com/storage/volumes/
Will look into that one as the recent docker volume backup extension seems to only be for docker desktop https://www.docker.com/blog/back-up-and-share-docker-volumes-with-this-extension/ unlike its origin https://github.com/BretFisher/docker-vackup.
