Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Rclone syncs your files to cloud storage
Sadly, it’s not configurable. It’s just an inherent limitation of the API (1). Takeout is the best alternative, but for something more realtime you can use tools (2) that wrap the browser UI which also exports full quality.

Looking for a Google Photos alternative with native app / Google Photos backup
I've seen LibrePhotos mentioned here (https://www.reddit.com/r/selfhosted/comments/npoxm4/librephotos_a_fork_of_ownphotos_with_video_support/) and think that this + GooglePhotos backup script (e.g. https://github.com/JakeWharton/docker-gphotos-sync) could do the trick.

Also, see Jake Wharton's Docker GPhotos Sync [0] for a containerized version of this tool. Unfortunately, this method seems to be the easiest way to automate a backup at full quality.

What I Use Now Instead of Google
As others have said Google Photos backup via RClone has some caveats, mainly not downloading at original quality. Google Takeout does solve this but but in weird hierarchies.
I stumbled on a new project which simulates a browser download using a headless Chrome Developer tools session[0]. Looks interesting, supports continuation and can be ran on a cron job. Worth a look.

By default, it starts at the most ancient item in the library, and progresses towards the most recent. It can be run incrementally, as it keeps track of the last item that was downloaded. It only works with the main library for now, i.e. it does not support the photos moved to Archive, or albums. For each downloaded photo, an external program can be run on it (with the -run flag) right after it is downloaded to e.g. upload it somewhere else.
