I cant get my 8BitDo Ultimate controller to work.
I'm having a similar issue on Fedora, I only got it working over bluetooth with joycond but then you lose gyro functionality, and joycond takes a bit of effort to uninstall. I also ended up installing dkms-hid-nintendo to no avail.

8BitDo Pro 2 in switch mode
I'm in 5.17 (Fedora 36) and it doesn't work for me in switch mode anymore. It used to work fine using this, but 5.16 and 5.17 should have that integrated, no?
