To have fun with assembly and peripherals, as Bruce noted, a development board equipped with an MCU is more appropriate. You can find a list of current available boards here (including purchase links). A good choice to begin is a board with the CH32V003 or CH32V203 (e.g. WeAct Studio's BluePill). This is the kind of hardware you want to build projects using LCD, motors, etc.
