Canvas Assignment Question
FWIW I looked into something very similar recently. AFAIK the REST API supports duplicating an assignment. but it looks like it does only that: Duplicate it. Still need to go in and edit the copies. Scripting out the functionality OP wants probably isn't rocket surgery but it's non-trivial and it likely could be done using the Python wrapper.

There's a certain GitHub tool I'm trying to use to export data from an LMS and I have no experience with Python or programming whatsoever.

Need to use a GitHub program but I have no experience in programming?
I graduated from college awhile ago and need to export all my files from Canvas (an LMS) ASAP before my account deactivates. There's a program that does exactly what I need it to do but it's on GitHub and I have no idea how to use it. I feel like pretty often I'll be searching for a program that can do a specific thing and when I find it, it's always on GitHub. I always have no idea on how to download it or use it unless it has a GUI. With applications like this one, do you have to have programming experience to understand how to use it? Or can a layperson learn how to use it pretty easily? And if so, how?

Do we get to keep access to Carmen after graduation?
I graduated last May and still have access, but second the recommendation to save as much as you can if it's important to you. You can export your submissions and current course content from the settings page. You could also mess around with the Canvas API, and I see some people on GitHub have already written scrapers for Canvas courses using their API (example).
