[Guide] Add Bluetooth to your factory 1994-2003 GM stereo
Hands-free calling would definitely be possible with the ESP32, but the audio library I use doesn't currently support it. https://github.com/tierneytim/btAudio/issues/20 If you want to get your hands dirty, feel free to jump in and see if you can get HFP working ;)

Looking for help with car stereo Bluetooth upgrade
Using the ESP32-PICO-KIT's onboard Bluetooth with the btAudio project (https://github.com/tierneytim/btAudio) should allow music streaming, but it doesn't look to support hand-free calling out of the box. What's the best way to do this? I assume I'll need a microphone board of sorts, though I'm not really sure what to do on the software side.

alternative to chromecast audio (commercially available, or DIY)
It's bluetooth only, so not a solution to the OP, but it's an old sparkfun ESP32 thing + an adafruit UDA1334A Breakout wired together on a breadboard running this arduino library for essentially all the software on the esp: https://github.com/tierneytim/btAudio

[Guide] Add Bluetooth to your factory 1994-2003 GM stereo
Attach female connectors to the two thick wires of the UBEC, and 4 more wires (just snip off the ends of some jumpers and strip the wires). Pick any color you want for the 4 wires as long as they don't overlap with each other or the black/red wires from the UBEC. Once the female headers are on, insert them into the plastic connector, using this as your guide: https://github.com/qwertychouskie/GM-EandC-Cemu-v2/blob/master/Documentation/9pin_connector_pinout.gif

Grandpa shouldn't be driving anymore
If you have a factory CD player radio, with a little assembly you can get Bluetooth functionality: https://github.com/qwertychouskie/GM-EandC-Cemu-v2
