PSA: Don't want to dual-boot but might need Windows occasionally? Make a "Windows To Go" bootable, persistent, removable drive!
But when I said "shell script" I was hoping for "POSIX shell script". Rather like this POSIX shell script that attempts to make any ISO into a bootable USB media.

What do i need to start with Linux?
If you run from a live environment, it's also good to use boot iso. A 100kB script which does a better job than 100 MB etcher...

You’ll need to also download a Sierra installer and follow the instructions on this GitHub Repo to convert the Sierra Installer into a iso file.

Another script for creating macOS installer DMG or ISO disk images for virtualization
Although there's many other scripts and tutorials floating around the web that convert various macOS installer versions to ISO, I wrote yet another one that a) works on installers for Lion through Monterey, 2) produces reasonably sized disk images that work with VMware and VirtualBox, and iii) should be fairly understandable for people who aren't shell script experts, even if it's not as bulletproof as some other candidates:
