EE Mod Tool Compilation Recommendations
Maybe some enhanced Stronghold stuff? This is more convenience/QOL than an enhancement of the strongholds themselves, but I like the Tweaks and Tricks "improved strongholds," which notifies you when you can/should visit your stronghold and makes messengers more reliable.

Mod overview: Tweaks, convenience mods, quality of life, and other minor enhancements
Tweaks and Tricks: “trap intuition” makes trap detection a bit smoother. Now you get warnings if you’re near a trap (you know, for those of us who don’t have trap locations memorized). I haven’t tried the familiar changes, so won’t comment on those. The “Improved Strongholds” is a nice convenience addition that reminds you if you have business at your stronghold, and “convenient ammunition,” which adds non-enchanted infinite ranged weaponry, is handy if you don’t want to drag around 100 lbs of throwing axes. The soundset changes, which expand returning NPCs’ soundsets to include BG1 lines as well, are a good addition if you’re sick of hearing the same battle cry again and again. Other tweaks close the infinite-money fence loophole, improve Protection from Evil to protect from mind control attacks (eg, vampire gaze), add more bags (gem, ammo, etc) from the beginning, and give the option to buff Melicamp in order to increase his odds of survival. Very useful overall.

Just finished Durlag’s Tower, what did you find most challenging on your first play through?
The Tweaks and Tricks mod has a component to reduce/nullify the detection delay, if it bothers you that much (or if like me ain't nobody got time to deal with dat). That said, I think it kinda fits for such a CURSED place that some traps could slip by.

Reveal Hidden Gameplay Options: adds options to the in-game menu that otherwise require editing the ini file. Options include: show spell AOE, debug mode, limit cleric/ranger spells, pause during dialogue, improved pathfinding, no cosmetic attacks, frame rate slider. For best results, install after Tweaks Anthology.

Pathing and Inventory
As far as the pathfinding goes, some people claim that some versions of the EE actually made it worse. I don't remember the classic games (or the earlier versions of the EE) well enough at this point to confirm that, but it might well be true. In any case, there are two options I'm aware of that can improve the pathfinding. One is to increase the Path Search Nodes value in your baldur.lua file. The other is to install the Hidden Gameplay Options mod and enable the Enhanced Path Search setting. Still, you'll sometimes have to micromanage party positioning, especially during combat in tight locations, and there's just no way around that. You can also enable the debug/cheat mode and use the Ctrl+J shortcut to teleport your party. Irrespective of any pathfinding issues, I routinely use that shortcut just to save time when traveling through areas that have already been explored and have no enemies.

For someone who's never played before - best way to experience the Baldur's Gate series?
Easiest way to add teleporting command (Ctrl + J to teleport to mouse cursor location) is to install Reveal Hidden Gameplay Options mod. You want the "Enable Debug Mode" for it. There are two other QoL updates you should grap "Show Area of Effect Range" and "Show trigger icons on tab".
What are some alternatives?
EET - Baldur's Gate: Enhanced Edition Trilogy (EET) is a modification for Baldur's Gate II: Enhanced Edition that merges whole saga into one game and provides continuity between the events of Baldur's Gate, Tales of the Sword Coast, Shadows of Amn, Throne of Bhaal and Siege of Dragonspear expansion (also for both Black Pits adventures). The name of this this modification probably rings a bell to those who have been following IE modding scene, thanks to the classic mod that inspired this project, called Baldur's Gate Trilogy (BGT), developed by Bardez and Ascension64. While EET remains mostly faithful to the premise of the BGT, it shouldn't be considered a direct continuation of that project. In fact both mods share little to no common code and took different design decisions in many aspects.
KorganFriendship - This mod adds a series of dialogues with Korgan.
Tweaks-Anthology - The Tweaks Anthology is a WeiDU compilation of nearly 200 components of cosmetic changes, house rules, and other tweaks. Some of these were fan requests, others are needed changes, and others simply make dealing with the more irritating aspects of the game engine easier. Each component can be installed separately so the player can pick and choose only which ones they wish to install.
