How can i model something like this with the details?
But if you really need to do it purely in Blender and procedual, check out b3dsdf. For creating basic shapes in shaders it's pretty dope. Experiment with displacement maps and you might archive such a log.

Did an icon study in Blender!
It's definitely hard to build shapes like this without pre-built setups(nodegroups), but this is more or less a test to try out these shapes I have been building for quite sometime (2D signed distance functions). Github repo if you are interested.

Tried drawing some kurzgesagt birds with only shader nodes
If you do want to get in-depth into shaders though thebookofshaders.com is a good introduction, while it's code but it does introduce you concepts that you can easily transfer to other places. If you do get the hang of those you could also translate these concept back to nodes(which in here I have used a lot of nodegroups translated from iquilezles.org)
