named containers, which aren't working need some special treatment, you might take a look at the SWAG config examples (also Nginx based)

Jellyfin external connections stopped working
Probably check your nginx proxy config next? Are you proxying from nginx:443 to jellyfin:8096? Or is it nginx:8096 to jellyfin:8086? I use the SWAG container and the config file that ships with it. That may be a good reference.
