Things Applescript Should Have
The one really agree with is the editor, and having to learn a new language for simple scripting. For that reason, I'm working on creating a wrapper for AppleScript with Python https://github.com/ninest/aquaui, if you're interested. With this, I can use AppleScript for input/output by showing dialogs and notifications while also leveraging the power of Python and its many libraries

Any good online courses/resources to learn AppleScript?
If you're interested in learning JXA, the Apple-provided resources for it are abysmal, but there's a community-driven cookbook on GitHub that does a nice job of outlining the way things work.

Tutorial on Automation with the Stream Deck?
There's a JavaScript version called JXA (JavaScript for Automation). This is my preferred variant because, being JavaScript, it complies with more traditional syntax for programming languages. Unfortunately, Apple did a lousy job of documenting it, so most of what we have is community-driven. The JXA Cookbook is a solid resource for the topic.

You can access the OSA (open scripting architecture) using different programming languages, not just AppleScript. Look into JavaScript for Automation (JXA), https://github.com/JXA-Cookbook/JXA-Cookbook/wiki
