Frustrated: I find the deployment of a full-stack app very complicated. Am I doing it wrongly?
The easiest way I've found to acquire them is using github.com/kshcherban/acme-nginx. This script will perform the HTTP challenge that LE uses to verify you own the domain you're trying to get a cert for. It also has a code snippet in its README that shows how to use the cert in your Nginx config.

Your own Certificate Authority (CA) in ONE simple command
Showcert is OpenSSL for humans, much simpler to use and it has gencert utility to generate certificates. Very easy.

showcert: simple OpenSSL for humans
showcert is simple CLI tool which does tiny fraction of what OpenSSL can do, but this fraction is 9/10 of what typical sysadmin/programmer needs from OpenSSL. If openssl is swiss army knife (you can repair spaceship with it), showcert is simple knife with beer bottle opener. It's much easier to use, syntax is intuitive and hard to forget (how to check reddit SSL cert with openssl? measure time to find sequence of commands for this and run it).
