Do I HAVE TO erase/format steam to install windows?
You can, of course. For ease of use though, you I also suggest you configure a boot loader: https://github.com/ryanrudolfoba/SteamDeck-Clover-dualboot

Steam OS 3.5 long boot time by Clover
I use Clover for dual-boot (SteamOS 3.5 and Windows 10) - https://github.com/ryanrudolfoba/SteamDeck-Clover-dualboot (release 15.10.2023) And I noticed that SteamOS loads much slower due to Clover - ~30 seconds to even over one minute. Windows 10 starts immediately. If I boot SteamOS directly from UEFI (Vol - + power button), the system starts almost immediately.

What’s the best way to install App Man, direct or via distrobox?
You may also find useful this project. It's a preconfigured Clover that can automatically reinstall itself after system upgrades. It automatically detects different OS on different drives and some OS are already preconfigured with beautiful icons. Works flawlessly for me, tested with Ventoy USB drive with multiple images and with Tails (Deck is an amazing device for anonymous Internet access!) on SDCard. The only things I adjusted were menu timeout and theme. I'm not sure if it's better or worse compared to refind.
- For how long do you have Windows on the SD card? Have you seen it malfunctioning?
- i've updated my script that unlocks the refresh rate upto 70Hz

10 Enterprise LTSC 2021 Touch keyboard broken
I use SteamDeck-Clover-dualboot to manage a dual boot. Updates to either SteamOS or Windows will often mess with the boot priority, so installing this script on the SteamOS side tends to help. When one OS “takes over,” manually booting into SteamOS fixes it right up.

WinDeckOS is OUT NOW!!
A better approach would be to start with a proper ISO downloaded directly from Microsoft and run a post-install script that installs any applications, drivers, and system tweaks you prefer. A similar project exists that I use and recommend for getting a fresh Windows install running on Steam Deck.

WinDeckOs looks very promising!
The only thing different here are some inbox apps are removed and Steam + assorted drivers are installed out of the box, all of which you can do with a community installer script and community tweaking tools.
- considering build a OS using Windows 10 Pro might call it WinDeck 10

Windows on Steamdeck Question
I personally recommend SteamDeckAutomatedInstall post install. It automates the process of downloading and installing all the drivers and basic tools you need to get started.
- Used the CelesteHeartsong script on a fresh Win11 install. How do I update it with new versions? Or know what to update?

Diablo 4... native in SteamOS? or via Windows? (some context and links in the post on install options)
I have also installed windows and have run this auto installer of all the things driver-wise: https://github.com/CelesteHeartsong/SteamDeckAutomatedInstall/releases
