Questions about a hypothetical mod for a Wii Classic Controller
Classic controller != wiimote, it's an expansion that plugs into a wiimote over I2C, so easy to attach to a microcontroller, there are several Arduino compatible libraries people have written for it like this, https://github.com/dmadison/NintendoExtensionCtrl , then for turning that + a couple of GPIOs into a USB controller can use an arduino HID joystick library on any of the 32U4 based arduino boards https://github.com/MHeironimus/ArduinoJoystickLibrary

How would I use a wii nunchuk with my arduino leonardo? complete noob..
Can someone point me in the right direction? I know nothing. I've been looking at how the code is formed here: https://github.com/dmadison/NintendoExtensionCtrl and have uploaded the example to my arduino to debug it through the serial monitor. Other than that, don't really understand. I did manage to make it spam keyboard letters on accident.. I would love to know how to use this as a game controller on my pc using keyboard keys.

can semeone help?
(For what it's worth, you could also try a pre-existing library with Nunchuk support).
What are some alternatives?
sys-con - Nintendo Switch sysmodule that allows support for third-party controllers
ESP8266-I2C-Driver - Fixed built-in I2C driver for Arduino ESP8266 core
MediaKnob - A simple media controller knob
lcdgfx - Driver for LCD displays running on Arduino/Avr/ESP32/Linux (including Rasperry) platforms
Hogwarts-Legacy-Broom - I turned a Harry Potter Nimbus 2000 Movie Prop into a controller to fly broomsticks in Hogwarts Legacy (PC).
ArduinoJoystickLibrary - An Arduino library that adds one or more joysticks to the list of HID devices an Arduino Leonardo or Arduino Micro can support.
GloSC - Tool for using Steam-Input controller rebinding at a system level alongside a global overlay [Moved to: https://github.com/Alia5/GlosSI]
SerialTransfer - Arduino library to transfer dynamic, packetized data fast and reliably via Serial, I2C, or SPI
SoftWire - Software I2C implementation for Arduino and other Wiring-type environments
ArduinoJoystickWithFFBLibrary - An Arduino Joystick Library With Force Feedback Feature
BrawlCrate - BrawlBox/BrawlTools Fork, Wii File Editor
HadesVR - The "DIY" SteamVR compatible VR setup made for tinkerers.
