How do I know if I'm actually mining Monero correctly and everything is alright?

There should be a link to GUPAX in the pinned FAQ, please add :)
Just don't misinform new Monero users: p2pool and gupax are not a mining pool (that is by definition a web service maintained by another person) but rather a mining software that comes with a burden - its maintain costs and self-responsibility.

While trying to restore old Monero wallet with mnemonic seed, I got new wallet instead of old
If you just misspell one word of 25 the check word won't be right and there should be an error message. Any random set of seed words (with the correct check word) will be a valid wallet address, however accidentally getting a valid check word is unlikely. If you are not using 25 seed words this issue might be relevant: https://github.com/monero-project/monero-gui/issues/1326
