Made my first custom PCB. I present you the Pico Fighting Board!
If you're just looking to get the board produced you can download the files at https://github.com/FeralAI/PicoFightingBoard/tree/main/boards/v1.0/outputs. The zip file contains the gerber and drill files, the PicoFightingBoard_BOM.csv is the bill of materials for SMT assembly, and the PicoFightingBoard-top-pos.csv is the component layout file for SMT assembly. These are the 3 files JLCPCB needed for production.

I was thinking of maybe adapting this firmware for native console support.

I made a custom firmware for the Fightboard MX with native Switch support!
A quick demo of it working via OTG on my Switch. The firmware update package can be found here. Usage and flashing instructions can be found on the Github page.
