NPC mods will depend a LOT on your personal taste, but some of my favorites are: Angelo, Isra (& Isra for BG2), Adrian, Kelsey, Xan, Ninde. This is a very subjective list, but I feel these are all well-made mods that fit reasonably well with the game. Note that if you install more than 1 NPC mod, you'll want to install this crossmod pack so that the mod characters will actually talk with one another.

What are some alternatives?
Alternatives - Alternatives offers two new possibilities to consider when making the decision about whether to side with the Shadow Thieves or with Valen's Mistress. In addition to the traditional two, the player may now opt to side with a group even the paladins in the party could have no objection to... or he may opt to skip the whole decision entirely and set sail for Maztica. BG1NPC - The BG1 NPC Project adds a great deal of content by expanding the depth of character and levels of interaction with the NPCs from the Baldur's Gate game. Requires Tutu, BGT, or BGEE.
Reunion - A Questmod for BG2:ToB!
Item_Upgrade - The Item Upgrade Mod Pack allows Cromwell and Cespenar to upgrade more items for you. Half of them are conveniences, the other half try to prop up weapon categories that are "weak" by comparison (e.g., maces and clubs).
Baldurs-gate-dnd-3.5 - This is a WeiDu mod for BG:Enchanced edition that changes 2ed ADnD rules to DnD 3.5 with some elements taken from Pathfinder
