xNVSE won't run New Vegas
I'm mostly looking to run xNVSE for the stutter fix. I've downloaded the newest version of xNVSE (6.3.0 from https://github.com/xNVSE/NVSE/releases)

NVSE issues for New Vegas
His video recommended using the New Vegas Script Extender (NVSE) v5.0 (which is now outdated it seems) and so I went ahead and installed it, and it ran well until mods further along in his video needed the newer xNVSE 6.2.6 - 6.3.0 version. My issue arises when it comes to uninstalling v5.0 and doing it correctly. I would then need to install the new version correctly also... I am new to modding and trying not to break the game. Any help would be greatly appreciated!

[FNV] Options aren't appearing when the game loads, it just shows the title screen with no way to start the game
That usually means a mod error. Check the requirements. I think the new update of one of those mods requires an updated xnvse.

Fallout 2 - Install Sfall or the open source re-implementation for a better experience. Install the Restoration patch if you want additional content.

As a newcomer, FALLOUT 1 IS AWESOME!!
For Fallout 2: For Both I suggest either Restoration Project Updated*, or updating Sfall. Sfall features a lot of QoL features (that you can toggle), such as quicksaving to individual save-slots, and a bunch more save-pages. In Fallout 2(and to an extend Fallout 1) you really shouldn't save in the same slots, as save corruption is not an unkown issue.

Enable Container Highlighting - essential for modern play - with [SFall 4.3.3])https://github.com/phobos2077/sfall/releases) (or at least v 3+). Your Steam or GoG game already comes with SFall, but the newer version lets you use your Shift key to spot potential loot. The SFall ReadMe gives good, clear instructions.
