Any recommendations for file manager to organize movie files?
A media manager can surely help, some years ago when i was messing with my kodi install i used MediaElch to sort and rename my TV shows by year/name/season not sure how the software evolved but most likely it can help you start organizing.

Managing and using my series collection with little overhead
I use jellyfin for playing and displaying shows, but the actual raging part is a bit limited as you said. So I use a separate program for that part. I've used 2, originally TinyMediaManager which has great search features and is more likely to get the right match but is closed source and freemium (limited to 10 shows iirc). More recently I found MediaElch which is a bit more picky about matching (from what I can tell it matches exclusively by season and episode number, not textual title) but is fully free and open source. It works very well also. With either of these you could tag fully manually or have them search tmdb, imdb, etc. Then they will write the info to .nfo files and Jellyfin, Kodi, Plex or whatever can do the display part.

Convenient way to enter a lot (100s of episodes) of TV metadata?
Unfortunately, Plex does not support NFO files, at least not with the new Metadata Agents. You would need to use 3rd Party Metadata Agents for Movies and TV-Shows and then use a separate library to use them since 3rd Party Agents don't work anymore in tandem with the new Plex official Agents.

While Plex normally doesn't read nfo files, you can install XBMCnfoMoviesImporter and XBMCnfoTVImporter agents to make it possible.

Switching from Plex worth it for my use case?
I use tinyMediaManager to add .nfo files, artwork etc. to all my movies and tv shows. To prevent Plex from using its automatic metadata retrieval (which in my experience sucks for more obscure stuff) and use my manually curated local metadata instead I had to install 3rd party plugins from github and while they work for now there's no guarantee that they will continue to do so.

To utilize NFO files you would need the NFO importer Metadata Agent for Movies and TV-Shows.

Moving a Plex install to another system
For example, you could create NFO files to store the metadata next to the video files and then use the NFO Movies Importer or NFO TV-Show Importer to read those NFO files that you can create with tinyMediaManager. You could also look into Plex-Meta-Manager but either of those solutions would require that you already have those files or create them, nothing really to get them out of plex in an easy way.

Plex deleted metadata after scanning library
The first one would be to use a different metadata Agent there NFO importer for TV-Shows and Movies. They will read the NFO files and add them to your Library item. AFAIK you can create those NFO files with TinyMediaManager This would give you total control over the metadata being added.

Adult Video Library Matching Agent
Tried Phoenix but I prefer to have a bit more granular control over this stuff so I use AdultMediaManager to scrape metadata and generate NFO files then use XBMCnfoMoviesImpprter as a library agent to get that displayed in Plex properly.
