Any recommendations for file manager to organize movie files?
A media manager can surely help, some years ago when i was messing with my kodi install i used MediaElch to sort and rename my TV shows by year/name/season not sure how the software evolved but most likely it can help you start organizing.

Music Videos
You'll have to edit in the details yourself more than likely but MediaElch has a Concerts section you might get some use out of.

Media Management help please!
Try tinyMediaManager or MediaElch.

Do you know of any programs I can use to organise a crap-ton of video files into a library format?
For my offline huge collection of movies, scrapping and organizing made easy by MediaElch https://github.com/Komet/MediaElch/releases

tinyMediaManager for the win
I refuse to purchase a yearly license. Sell me you software directly or I continue to use MediaElch for free.

Managing and using my series collection with little overhead
I use jellyfin for playing and displaying shows, but the actual raging part is a bit limited as you said. So I use a separate program for that part. I've used 2, originally TinyMediaManager which has great search features and is more likely to get the right match but is closed source and freemium (limited to 10 shows iirc). More recently I found MediaElch which is a bit more picky about matching (from what I can tell it matches exclusively by season and episode number, not textual title) but is fully free and open source. It works very well also. With either of these you could tag fully manually or have them search tmdb, imdb, etc. Then they will write the info to .nfo files and Jellyfin, Kodi, Plex or whatever can do the display part.
- Deleted Categorys still apears - hate this Software

Metadata Downloader - Third Party
I also messed around with MediaElch but compared to TMM, I found it lacking.

Gzip compression questions for 2 use cases
I use Nginx for Sonarr/Radarr would I see any general performance benefit when loading their webpages in general? If so, what level of compression would be ideal for this case?

I am looking for a troubled/bad open source codebase
In the /r/selfhosted community Sonarr and Radarr are staples, but their code isn't particularly great and there are lots of bugs people just deal with. Radarr forked Sonarr, their interface is similar but they suffer from disjoint bugs.

There may be better places, since I've just stuck to the same one for years now (and don't need them often enough to look into alternatives), but I usually use either subscene or opensubtitles. There are also programs that can automate it like bazarr, but it requires you to also use Sonarr/Radarr.

Yo Ho, Yo Ho, a pirates life for me!! Recent streaming services, prices and shows getting butchered, finally decided its time. Here's how a basic self-hosted 'Netflix' would look like. Fully automated once its setup. Using only a makeshift homelab server from second hand parts.
Radarr: Automatically downloads movies.
- How do i move my files and rename them but also keep it seeding with the original title for torrents?

HELP! :)
Radarr is for movies. Sonarr is for TV shows.
