Regarding backstab multiplier
Isn't https://github.com/FredrikLindgren/rr official - in fact even more than the formus that used to require manual uploads?

Mod overview: Tweaks, convenience mods, quality of life, and other minor enhancements
Rogue Rebalancing: I would adore this mod for the Thieving overhaul alone. Suddenly failed pickpocketing no longer turns enemies hostile: now you can talk your way out of it (well, a couple of times) depending on your stats, including lore or reputation. Other components alter thief and bard kits: the swashbuckler uses the fighter THAC0 table when wielding melee weapons, the skald song’s upgrades are moved to slightly lower levels, the [[jester and bard songs are changed]], and the assassin is now limited to non-good alignments. There are also some significant changes made to HLAs, and bards can now cast up to level 8 spells, as per PnP rules. Finally, it improves the Shadow Thieves’ combat abilities, and optionally adds a challenging combat encounter with the Chosen of Cyric.

rogue rebalancing mod seems to contain a virus
It should be good, but if you're still not trusting it, try downloading it from Github.

Rogue rebalancing mod?
GitHub has two packages older one and newer one. I haven't tried neither one as my version was dled from spellhold site but I believe the older one should be identical to the one that has been available in spellhold. The newer one states it's compatible with the latest 2.6 version.

Mod overview: Tweaks, convenience mods, quality of life, and other minor enhancements
Reveal Hidden Gameplay Options: adds options to the in-game menu that otherwise require editing the ini file. Options include: show spell AOE, debug mode, limit cleric/ranger spells, pause during dialogue, improved pathfinding, no cosmetic attacks, frame rate slider. For best results, install after Tweaks Anthology.

Pathing and Inventory
As far as the pathfinding goes, some people claim that some versions of the EE actually made it worse. I don't remember the classic games (or the earlier versions of the EE) well enough at this point to confirm that, but it might well be true. In any case, there are two options I'm aware of that can improve the pathfinding. One is to increase the Path Search Nodes value in your baldur.lua file. The other is to install the Hidden Gameplay Options mod and enable the Enhanced Path Search setting. Still, you'll sometimes have to micromanage party positioning, especially during combat in tight locations, and there's just no way around that. You can also enable the debug/cheat mode and use the Ctrl+J shortcut to teleport your party. Irrespective of any pathfinding issues, I routinely use that shortcut just to save time when traveling through areas that have already been explored and have no enemies.

Any idea how to enable console commands?
Might be easier just install a mod that unlocks the console for you.

For someone who's never played before - best way to experience the Baldur's Gate series?
Easiest way to add teleporting command (Ctrl + J to teleport to mouse cursor location) is to install Reveal Hidden Gameplay Options mod. You want the "Enable Debug Mode" for it. There are two other QoL updates you should grap "Show Area of Effect Range" and "Show trigger icons on tab".
