Can I play VR with the standalone Enderal SE
all you need to do is have enderal se in your steam library, Then either mod it manually or use wabbajack like EVRE https://github.com/Ashok0/EnderalVREssentials , the first paragraph in the preamble also answers your question

Which VR games are you enjoying at the moment?
Next in queue: Enderal VR. I downloaded a massive modpack and am currently procrastinating because the prospect of combing through the 8000 config menus for all the mods is quite daunting.

Looking for a different Experience
You can try https://github.com/Ashok0/EnderalVREssentials to play Enderal in VR. It's a bit out of date right now and I'm not sure if it still works, but I had a lot of fun with the modlist. Beyond that all the big content mods work, ie Vigilant, Bruma, Beyond Reach. The best 'rogue-like' mod you can get would probably be Rogue-Like encounters which can really change up the game.
