Seeking advice: keep Creality Ender 6 main board w/ Klipper, or move to SKR Mini E3?
I have the stock screen install currently. While it works with a modified version of Klipper (https://github.com/Desuuuu/DGUS-reloaded-Klipper), that release is 2-3 years old now. I use vanilla Klipper so that I can can stay up to date with the latest releases. I don't find much use to a screen because my computer is near my printer and I just use Fluidd (or Mainsail, or Octoprint, etc.).

Understanding what Klipper can do for my Ender 3 V2
There is an old, now quite outdated, attempt at supporting the Ender 3 v2 touchscreen on Klipper through a fork. But that has not been updated in quite a while and it never really worked well enough to actually use in the first place. I strongly recommend you don't try to use that fork, but if you do you will need to recompile and re-flash the firmware as it uses an older version of Klipper. Again, this has not been updated in over a year. Do not try to use it.

Had anyone repurposed their Ender 5 Plus Touchscreen?
With klipper i use https://github.com/Desuuuu/DGUS-reloaded-Klipper Shows temperatures and progress, i like it.

FLSun Super Racer printing PETG for the first time bad sign
For me I am using ideamaker with 245 C and 80 C as well but my firmware is not the official I am using https://github.com/Guilouz/Marlin-SuperRacer-MKS-Nano-V3 you should give it a shot and see works really well

FLSUN SR issue
I would try and flash to the older 1.3 firmware at best try the custom firmware @ https://github.com/Guilouz/Marlin-SuperRacer-MKS-Nano-V3 and run G33 and of course reset the EEPROM before flashing and afterwards when the flash is completed

Adjusting z height during print on SR
For me it does save it while I am in a print but I am not using official firmware using the marlin build on GitHub as I changed my extruder to LGX Lite via https://github.com/Guilouz/Marlin-SuperRacer-MKS-Nano-V3/blob/main/README.md note I do use G33 then the paper test afterwards I adjust while printing and saves

FLSun SR - M600 pause and filament change
I've installed firmware on my SR compiled from here, and one of the things it does is add support for the M600 command, allowing me to pause and change filament at a specific point in the print.

How does one adjust the voltages to the stepper drives?
I tried Klipper but I had issues with finding/creating the correct config file for Direct Drive with the LGX Lite so I just run the LGX Lite firmware found at bottom of page here https://github.com/Guilouz/Marlin-SuperRacer-MKS-Nano-V3
