Your experience with Vanilla Kubernetes
e.g. https://tanzucommunityedition.io/ has some opinions about how to set things up but there's no support contract, so I'd view it as providing guidance or defaults that are likely to work for most use-cases, similar to "I want to make a web app but i'm not already an expert with years of production experience, so i'll use a framework like django/rails/spring/etc. instead of writing free-form from scratch"

Suggestions on transitioning away from Rancher?
Tanzu Community Edition (https://tanzucommunityedition.io/) with "unmanaged clusters" is a fully free + OSS solution for using the cluster and package management tools of vmware's Tanzu without being locked in to other parts of the vmware stack. I honestly don't know all the details but there's a way of buying a support contract also.

Homelab k8s
I use Kubeadm (https://kubernetes.io/fr/docs/setup/production-environment/tools/kubeadm/install-kubeadm/) , or Agorakube (https://github.com/ilkilab/agorakube). If your are on Vsphere, maybe try "VMware Tanzy community" (https://github.com/vmware-tanzu/community-edition) ?

vSphere with Tanzu vs. Tanzu Community Edition on vSphere
I've just installed a simple PoC Kubernetes cluster on my home lab two-host vSphere cluster using Tanzu Community Edition by following the instructions from tanzucommunityedition.io. While it seems to work just fine I don't see how/if is it that much different than just spinning up few VMs and using one of the other popular Kubernetes distributions. Apart from a bit of help from the installer that is aware of the vSphere infrastructure, I can't see any real deep integration after the whole thing is up and running.
