What to expect in GNOME in 2022
NvFBC plugin for OBS: Created because there was no way to do screen-capture on Wayland. Now the author has abandoned this plugin because there's a screen capture API on Wayland which has the same level of performance (NVIDIA implemented the Wayland framebuffer capture API).

Screen tearing and stuttering with OBS Studio
I'm using the plugin obs-nvfbc with nvidia-patch for high performance capture, but when the OBS is active and NvFBC Source is added to scene, GNOME and any game I open will tear pretty badly but the resulting video recording will be smooth without tearing or stutter. Enabling Force Full Composition Pipeline on nvidia-settings solves the tearing, but then GNOME and any of my games will stutter pretty badly both to my eyes and the recording.
