The single biggest feature of Joplin is that it has a functional API that I can call and interact with programmatically, which means that if I don't like the way something works or if I want functionality that isn't included in Joplin out of the box, I can write my own. I did this recently with a complete rewrite of the Kanban plugin to use sub-notebooks -- you can find it here if you're interested. It's not spectacular but it meets my requirements and that's what I needed.

I'm not sure what you're asking relating to an example, but I can say that an overwhelming amount of notes hasn't happened to me yet. I use notebooks and sub-notebooks religiously, and also wrote my own web app for doing kanban-style organizing with notes that I've been using to outline things and it's been working really well. https://github.com/itsthejoker/kanbaninator if you want to try it.
