Are specific softwares avialable that are suitable for converting different diagrams, graphs and mindmaps to latex codes?
There may the occasion you actually need the data from a publication, and want to plot them altogether with data newly collected data in one diagram in common. An overlay, though possible, can become tricky (scaling, centering, alignment, etc.) and plotting all data in a diagram generated from scratch (gnuplot/octave, matplotlib, Origin, ...) exported as an illustration in the usual formats (.pdf/.png), or pstricks/tikz is easier/more consistent with the material already compiled in your document. Then you like to reach out for a program like WebPlotDigitizer* to extract .csv data.

If the illustration's resolution is high enough, use a digitizer. Some run in your web browser, installation free, cross-platform (e.g., WebPlotDigitizer). And with "indication on the right saying what color is related to", you refer to the addition of a label/a legend.
Launch/Launch now on https://automeris.io/WebPlotDigitizer/ both worked for me well (Firefox, Debian Linux) then File -> Load Images for .png; or do you use an other web browser/page/image format?

Tikz conversor
It would be helpful to narrow the type of image you want to re-create, and to tailor the query accordingly. E.g., is it a diagram? This could be digitized to generate (x,y) tuples and plot again (e.g., [gnuplot](www.gnuplot.info) understand set terminal tikz for an export in this format, like in texdraw or pstricks' convention, or .png/.pdf). One of the versatile digitizers is WebPlotDigitizer. There are plenty videos about its application on youtube (a recent one about geography).

You can use AutoEQ for both of those functions. If you carefully trace a line of Sonarworks' target curve in a photo editing software, you can import it into WebPlotDigitizer and use jaakkopasanen's guide to use it as a compensation curve.
