About to play Morrowind again after many years. Never used mods before so I don’t even know where to begin. I love the core game so I’m not looking to change the way it plays just really want good visual mods. Any suggestions?
If you're manually installing mods (without MO2), I recommend using this github page on project atlas as a guide for install order.

Recommended code patch settings and gameplay changing mods?
I strongly recommend trying out TR, but only after you've completed base Morrowind, or at least explored it to your heart's content. It's a dramatic change in gameplay style. Comes with a list of recommended mods which can be a little sensitive to install order (the Project Atlas Github page gives instructions on install order for the most important and sensitive to conflict mods) Getting the game running may take anywhere from a few hours to a few weeks depending on experience level. The only mods I recommend not installing from the recommended lists are OpenMW and its affiliated mods, Anthology Solstheim, Province Cyrodiil and Skyrim: Home of the Nords (Great, both of them, but I recommend using them in OpenMW), The sign replacers (some people like them, I do not), Aesthesia Groundcover (great Mod, I prefer Remiros, Cutting Room Floor (I do not like restoring cut content, I usually just find out there's a reason it was cut, introduces a lot of unwanted jank), and True Type Fonts (OpenMW only).

What graphical and optimization mods should I install for Open MW?
Basic stuff that comes to mind would be project atlas + atlad, that alone will mean a lot, along with Morrowind Optimization Patch (these need to be in a particular order, MOP comes first). The page for the addon lists a process for that, very good set of things to do imo.
