Get Started Making Music
Dirtywave have shipped plenty of M8's in the last year. They just produce them in batches, there have also been shortages of the Teensy 4.1 microcontroller used IIRC and they are highly sought after. You can also "build your own" from supplied firmware https://github.com/Dirtywave/M8HeadlessFirmware
This is not the fly-by-night kickstarter you are implying.

Mini vs. M8 vs. OG Tracker: what exactly are they trying to do?
Search for dirtywave M8 headless, check my previous post of my version of a headless build. But if you want to start somewhere just buy a teensy 4.1 and do this: headless setup!

Pico8 Music Synthesizer
You might be interested in the Dirtywave M8. If you don’t want to buy or wait for the actual hardware, you are able to install the software yourself and run it in headless mode.

You might also look at Pure Data and Max.

In terms of actually making music, I think that probably just comes with both practice and experimentation.

Designing a even more esoteric music tracker than the Dirtywave M8 using the ardux.io layout
If you want to copy the m8 tracker, you can also run https://github.com/Dirtywave/M8HeadlessFirmware on a teensy, then use the rpi for display + keyboard

I'm seeing people use the M8 Tracker software on their pcs and other handhelds. Where can I find the software? Wasn't able to pick a M8 tracker up before they sold out.
There are more on the way for sure, but yeah if you want to go headless: https://github.com/Dirtywave/M8HeadlessFirmware

Is the original documentation of the project still available somewhere to make your own prototype?
Here ya go. That's the M8 headless firmware link, plus a link to the setup guide. Haven't made one of these myself, but a lot of people on YouTube use them. Sound-wise it should be identical.

The M8 is easily the most versatile piece of music equipment I’ve ever used.
Dirtywave also offer a “headless” version of the tracker that you can build for $40 with a teensy and an sd card. You have to connect it to your computer to use it, but it’s a great way to learn if a tracker is a good fit for you before shelling out $550.
- Trying some fun womps with the M8 Headless tracker
