If you use Pop and require stability or rely on some third party kernel module/drivers, I would recommend installing a LTS kernel (Mainline or xanmod.org) and prevent updates from the stock linux-* packages, since you cannot uninstall it and the kernel with the higher version number will always be selected as the default one when there are updates. Another option is to create a manual entry pointing to the LTS kernel and manage the images in the /boot/efi partition manually.
