Not sure if it's necessarily the definitive way, but using the third-party AudNexus agent is popular. I also use this guide to add the right local tags, but just using the right file structure should be enough for books to get matched properly. Fingers crossed official support is coming soon, but no one outside of Plex knows if/when it's coming.

MakeMKV will be the easiest option for DVDs and Blu-rays. Copying Blu-rays is technically only free for 30 days, but it's free while in beta (and it's been in beta for over a decade now). If you don't want a 1:1 copy of the disc to save some space, HandBrake is a popular tool to reencode the file.
