Easiest first step would be to just extract the data in the waveform from the image using an automatic tool like WebPlotDigitizer (https://automeris.io/WebPlotDigitizer/). Then you can perform classic DSP operations on the underlying time series data. Much easier than an integrated computer vision solution.
