2D with skin and bone animation could use something like Spine 2D. There is no official runtime for Godot 3.x, but there is one for Godot 4.
With some searching I found this old repo. It looks like you would find some answers in there. Also, this tutorial covers a 2D player editor some components of that might be useable in 3D.
