Maybe Obsidian is not the best suitable solution for your needs. But I strongly suggest you use this Obsidian plugin: RafaelGBobsidian-db-folder Obsidian Plugin to Allow Notion like database based on folders.
Yeah you would for sure need to write a plug-in for this functionality. I actually looked at this exact same use case though. Logseq could be worth a look with their calculator feature (https://docs.logseq.com/#/page/Calculator) Logseq also handles metadata on a per block basis vs a per page basis so that helps a little in granularity. Although for full functionality you would probably still be needing to write a plug-in. I ended up deciding on just using Grocy (https://grocy.info/) myself. I haven’t Gergen around to getting it set up yet but I’ve used their demon instance and it’s really powerful and has all the features I wanted out of the box. I love having everything in text files like Obsidian/other tools handle but for some things it hasn’t been worth the effort for me personally to try to reproduce those things inside of one of these tools.
