There won't be any games that you would be able to run with WINE that wouldn't run with Proton, proton has more game centric bugfixes. There are also different forks of Proton, one I use the most is called GloriousEgroll and it generally makes games play smoother and fewer crashes. The days of needing custom compiled WINE instances to fix specific games are past us, just stick to steam and lutris.
There are plenty of ways to use GoG on Linux. You could download offline installers of games and run them with Lutris. In fact, Lutris seems to have it's own GoG integration (I haven't tried this though). Otherwise e.g. minigalaxy exists.
