There are multiple VTTs out there that can help you. Roll20 is one of the most famous and the basic functionalities are easy to use. If you have some hosting knowledge you could go for Foundry which is 40 euros and is self-hosted. It has better functionalities and is easy to use.
For keeping track of your notes you can use Google docs, this also gives the possibility to share files with your players. I personally use Obsidian which is a knowledge base tool. You can create small notes and link those in order to create a whole network of information.
