In TWRP you have to go to Mount menu and mount everything that you can: /system, /vendor, /data, etc. Then go to Wipe menu, click Advanced Wipe and check everything, then wipe your device clean of MIUI. At this point there will be no OS installed in your phone. After that, copy your custom rom .zip file to a USB Type-C OTG drive, plug it in your phone, go to Mount menu and mount USB OTG, then go to Install and click your custom ROM file in the OTG to install it. Install Magisk if you want root. Install Google Apps package from OpenGApps or other sources if your custom ROM doesn't include GApps (Play Store).
