If I'm not in a hurry for something to process then I set it to run on that. For instance, when I was looking at the AV1 codec I had it grinding NotEnoughAV1Encodes for days at a time.

That is possible. You can run Truenas: https://www.truenas.com/truenas-core/ if you need ZFS or Starwinds SAN and NAS: https://www.starwindsoftware.com/free-san-and-nas (support ZFS and mdadm if I'm not mistaken) as a VM on top of ESXi. You'll need however to have HBA to pass it through to a VM with ZFS or RDM the drives. Also, OMV would consume minimum resources: https://www.openmediavault.org/. As to old PC, it will do the job but consider power usage and cost as already mentioned.
